Autumn’s the season for slow cooking, rich flavours, and meals that feel like a hug from the inside out. So pop your pinny on, put the kettle on for a brew, and let’s get cooking!
1. Hearty Yorkshire Stew with Dumplings
If there’s one thing that’ll warm your cockles on a chilly October evening, it’s a big ol’ pot of stew bubbling away on the hob. This one’s a classic, beef, veg, and gravy thicker than your grandad’s accent.
You’ll need:
-
500g stewing beef, diced
-
2 onions, chopped
-
3 carrots, sliced
-
2 potatoes, cubed
-
2 tbsp plain flour
-
500ml beef stock
-
1 tsp Worcestershire sauce
-
A sprig of thyme (posh, but it does the trick)
For the dumplings:
-
100g self-raising flour
-
50g suet
-
Pinch of salt
-
Splash of water
How to make it:
Brown the beef in a big pan, then add your onions, carrots, and potatoes. Sprinkle over the flour, stir it all about, and pour in the stock and Worcestershire sauce. Chuck in your thyme, pop the lid on, and let it simmer low and slow for a couple of hours.
Mix your dumpling ingredients ‘til you’ve got a soft dough, roll into balls, and drop ‘em on top of the stew for the last 20 minutes. Serve with a crust of bread and a smug smile.
2. Apple & Cinnamon Crumble – A Proper Autumn Pud
You can’t have autumn without apples, can you? This crumble is dead simple, smells like heaven, and tastes even better. Perfect for using up the windfalls from the garden (or your neighbour’s tree, if you’re cheeky).
You’ll need:
-
4 big cooking apples, peeled and sliced
-
2 tbsp caster sugar
-
1 tsp cinnamon
-
150g plain flour
-
100g butter
-
75g demerara sugar
How to make it:
Pop your sliced apples in a baking dish, sprinkle with caster sugar and cinnamon. Rub the butter into the flour until it looks like breadcrumbs, then stir in the demerara sugar. Sprinkle that lot over the apples, bake at 180°C for about 35 minutes ‘til golden and bubbling.
Serve with custard, cream, or – if you’re feeling fancy – a dollop of vanilla ice cream. Ey up, that’s the stuff.
3. Pumpkin Soup with a Kick
Before you chuck that Halloween pumpkin in the bin, think again! This spicy soup’ll warm you right up and make you feel virtuous for eatin’ your veg.
You’ll need:
-
1 small pumpkin (about 1kg), peeled and chopped
-
1 onion, diced
-
2 cloves garlic, minced
-
1 tsp curry powder or chilli flakes (depending how brave you’re feeling)
-
500ml vegetable stock
-
100ml double cream
How to make it:
Fry the onion and garlic ‘til soft, add the pumpkin and spice, and give it all a stir. Pour in the stock, simmer for 20 minutes ‘til the pumpkin’s soft as butter, then blend until smooth. Stir in the cream and season to taste.
Top with a swirl of cream, a few pumpkin seeds, and a sprinkle of smugness. Lovely stuff.
